Too Much Zucchini in the Garden Cake

Our garden is producing more than just weeds! The zucchini is looking great, but we waited too long to pick a rather large one which means it was only baked good worthy! No problems there since the kids like to bake and we had a free morning. We had to scout down a starting recipe and add a twist to have it suit us.  We had a bunch of boxed mix leftover from a good sale so we went from there.

Boxed cake mix
1/2 cup oil
4 eggs
2 cups zucchini
cinnamon and vanilla
Handful of chocolate chips
 Bake at 350 degrees for 35 minutes in a greased pan.


 We topped ours with homemade cream cheese icing.
